Kushiyaki Suminoya Sakura is a yakitori maniac’s food heaven. The owner Kota-San, would say he’s not obsessive or fixated on any particular aspect of making the best yakitori, however its quite the opposite. He makes it a point to only use fresh meat never pre-frozen which is often the case in many establishments. More importantly Kota-San painstakingly prepares each skewer to be the perfect size prior to cooking over japanese bincho tan wood. When he cooks each skewer over the wood he says he is speaking to the wood in a listening to the sounds of the bincho tan and meat cooking as well as watching for small signals only he knows that the skewer has reached is perfect moment to serve. Its clear to see his world revolves around making the perfect yakitori. They are currently offering the “Suminoya Special Course” for 5,000yen which includes 11 different yakitori items and “all you can drink” for 90minutes. So go check them out. They are about a 2min walk just outside of JR Hatsukachi, Station. If you love yakitori, it would a mistake to not go.
