Obanzai Lounge Yoube opened in December 2020 on Hatsukaichi’s main shopping street. As the name says, they specialize in obanzai. Obanzai is Kyoto style home cooking. The style follows a set of rules like being flexible with what is available to you. This includes restraining yourself to food that is fresh, local and seasonal. The style also avoids waste as much as possible. The results are simple but creative and flavorful dishes.
The proprietress hails from Tanba Sasayama, a town in the Kyoto area known for agricultural and wild food products like black soybeans, chestnuts and especially boar. You will find all of these Tanba Sasayama products in Tomobe’s cooking. The botan-nabe, a kind of hot pot, uses finely shaved Tanba Sasayama wild boar crafted into the shape of a botan flower, peony in English. The fat of the meat is especially fine and becomes more tender and flavorful the longer it is stewed. The nabe is served with vegetables in a unique miso broth made from black soybeans and chestnuts.
In keeping with the principles of obanzai, different obanzai are available each day, such as hijiki mushroom stew, boiled potherb mustard, ginger yaki, and pan-seared horse mackerel.
