Located along a highway, Menya Matsu is a little far from public transportation. However, the 12 minute walk from JR Miyajimaguchi Station is worth the burnt calories. Menya Matsu starts preparing your bowl of ramen two days before it hits your table. The broth is what makes ramen special. They have two kinds of broth: Matsu and Gyokai. Their Matsu broth takes 48 hours to prepare. The process begins with a clear consommé base made from domestically raised chicken, pork and vegetables. The flavor is further developed with several types of sauces made from blended salts, such as seaweed salt. The char siu toppings are taken from pork belly and shoulder for the strongest umami flavor. The Gyokai broth is seafood based. The stock is made with mackerel, round herring, sardines and kelp as well as pork bone to make it richer but not too rich. Leave room for dessert. Their desserts change, but so far have included homemade panna cotta and almond jelly.
