Before she was the owner of a tonkatsu pork cutlet restaurant, Junko Ohta wasn’t very fond of pork cutlets. But then she visited Miyazaki Prefecture in southern Kyushu and tried Hazama Ranch’s Kinako Pork. Ohta was so surprised by how delicious the meat was, that she decided to bring it to Hiroshima. In 2000, Tonkatsu Taichi opened an eight minute walk from Sanyo Jokauen Mae Station, serving pork cutlets made with Kinako Pork.
Hazama Ranch’s pigs are raised in a hygienic, low-stress environment and are fed a homemade feed blend containing around 20 ingredients, including carefully selected corn, soybean meal, and soybean flour (kinako). This produces meat with a pleasant smell plus a unique umami, sweetness, and melt-in-your-mouth softness. For its excellence, Hazama’s pork earned the Ministry of Agriculture, Forestry and Fisheries Prize.
A great way to experience many kinds of tonkatsu is to order the “Hors d’oeuvre” plate. It comes with loin cutlet, filet cutlet, minced pork cutlet, minced cutlet with cheese, fried chicken, and cutlet sandwiches. With any set meal you order, the salad, miso soup, pickled sides and rice refills are all free. There’s also a free coffee service every day until 3pm.
