Shiomachi Sushi Tsurumi is located on the first floor of Shiomachi-an, a traditional, Japanese-style house built more than 100 years ago, right outside the exit of Itsukushima Shrine. They take great care in the making of their sushi. The rice is cooked in kombu dashi that was extracted from water over two days. The seafood is mainly procured from Hamada, a city on the Sea of Japan known for their fresh seafood, and it is served in a way that maximizes the quality of the ingredients. For example, because temperature has a large impact on the taste of food, Tsurumi typically serves their food at body temperature to maximize the flavor.

The course meal is a must if you visit Tsurumi around lunchtime. Each dish is carefully prepared while watching the customer’s pace so the food will be enjoyed in its freshest, most delicious state. The contents vary slightly depending on the season. Depending on when you visit, you can find dishes like gokusen-o vinegared Miyajima oysters; broiled scallops with soy sauce, sea urchin and roasted engawa; anago sushi served on a traditional Miyajima rice scoop; clam soup; and a variety of nigiri sushi.
